The following meals roughly follow the guidelines outlined in the What Do You Mean by "Healthy"?

  • Substitute brown rice for the white rice. In this recipe, brown rice is great and you hardly notice.
  • Substitute ground turkey for ground beef
  • Per the suggestions of other posters, I boiled my peppers for 10 minutes beforehand, which cuts down on the cooking time to about 30 minutes
  • I like to sprinkle cheese (mozz or parmesan) on top

  • Add Spinach: Before it goes in the oven, mix in a thawed, drained, 10oz pack of chopped spinach

  • The pistachios are an odd, but excellent twist

  • Sooooo good! I wish I could find other quinoa casserole recipes with meat and veggies, but so far I am out of luck.

  • I like to add mushrooms to make it less calorie-dense
  • You could use fat free cream of mushroom soup. Either way, this is one of those midwest casseroles that is good, but not in any way gourmet:)
Pesto Shrimp Pasta shrimp spinach, tomato pasta
  • Andris LOVED this one. I changed a few things from the original Men's Health recipe, such as taking out the walnuts, and using less pasta (though I gave Andris the recommended amount of pasta). I also reduced the amount of pesto used because the ready-made pesto I bought was extremely high in calories. The way I posted it is the way I made it and it turned out very well.

  • Thanks to David for this recipe. Even without Franks Red Hot I found it quite tasty!
Cajun Chicken Pasta chicken bell peppers, mushrooms pasta
  • Replaced the butter with with cooking spray
  • Replaced the heavy cream with 1/4 c. skim milk, 1/4 c. sour cream, a bit of yogurt and some corn starch
  • Cut the chicken into bite size bits before shaking them in the bag with cajun flavoring
  • Used real garlic and sauteed it with the green onions before adding the chicken
  • Used penne pasta, but may reduce the amount so that I only get 2 oz
  • Use more mushrooms that recipe calls for
  • Used a yellow pepper instead of a green pepper
  • Used half of the parmesan cheese
  • Total calories of altered recipe: 1046
Chicken Marsala chicken mushrooms pasta
  • More mushrooms are always better
Greek Chicken Pasta chicken artichoke hearts, tomato, red onion pasta
  • Only use half of the pasta
  • Serves 4
Szechuan Noodle Toss chicken spinach, red peppers pasta
  • This recipe is already altered to reduce the amount of sesmai oil
  • I use wheat pasta
Tuna Noodle Casserole tuna mixed vegetables, celery pasta
  • This is a variation on the recipe from the Better Homes and Garden cookbook
