- Cook the pasta according to package. Drain and set aside.
- If the shrimp hasn't been cooked or peeled, peel and cook the shrimp in a non-stick pan using cooking spray. If the shrimp is cooked, warm the shrimp in a pan with cooking spray. (Optional: add 1 Tbsp. of pesto to the shrimp as you cook or warm it)
- Add the spinach and cover until the spinach wilts. Add the tomatoes and gorgonzola and the rest of the pesto.
- Serve sauce on top of 4 servings of pasta. Enjoy!
