Szechuan Noodle Toss

Serves: 4

8 oz. whole wheat spaghetti
1 T. . sesami oil
2 sweet red peppers (julienne)
4 greenonions (1 inch pieces)
2-4 cloves garlic
10oz torn spinach (frozen or fresh)
2 c. cubed cooked chicken (2 1/2 breast)
8 oz. water chestnuts (canned, drain water)
1/4 c. soy sauce
2 T. rice vinegar
1 1/2 t. roasted red chili paste
1/2 t. minced ginger
   
 
  1. Stir fry chicken with non-stick spray and 1 T. sesami oil. Set Aside.
  2. Cook whole wheat spaghetti according to directions on box.
  3. Stir fry red pepper, onions, and garlic with non-stick spray and 1T. sesami oil for two minutes
  4. Stir in spinach, cover 2-3 minutes, until the spinach wilts
  5. Remove from heat, mix in chicken, whater chestnuts and paste.
  6. Toss with soy sauce, vinegar, and pasta
  7. Serve - excellent hot or cold.
